- 2 clementines
- 200 g of sugar
- 2 eggs
- 90 g of neutral oil such as canola
- 220 g flour
- 2 tbsp. baking powder
- 100 g fresh or frozen cranberries
- 80 g of pistoles or black chocolate chips
- Paper cups/muffin cups
Preheat oven to 350°F.
Put two whole clementines (with the skin, etc) in the mixing bowl. Add the sugar and mix 1 min / speed 10.
Add eggs, oil, flour, and baking powder. Mix 20 sec / speed 7.
Add 80 g fresh cranberries and chocolate chips. Mix gently 10 sec / reverse / speed 3.
Pour the mixture into the muffin cups. Place the remaining cranberries on top of the muffins. Bake 25 to 30 minutes at 350°F.
• The recipe can be doubled. We will double all the ingredients but we will follow the same steps and programming.
