Quinoa, Strawberries, Goat Cheese and Arugula Salad
Recipe for Thermomix TM5.

- 250 g of quinoa
- 500 g of water
- 1 orange
- 1 lemon
- 50 g of olive oil
- 30 g of honey
- 100 g arugula
- 130 g fresh goat cheese
- 150 g pumpkin seeds
- 450 g strawberries
Peel the orange and lemon and put them in the mixing bowl. Add olive oil, salt, pepper, and honey and mix 30 sec/speed 10. Pour this vinaigrette into a serving bowl.
Without washing the mixing bowl, click on: Menu > Automated recipes > Boiled Rice. Follow the instructions as well as the ones underneath to adapt the recipe with quinoa.
When following the instructions, instead of adding 1 kg of water, pour 500 g and add salt, olive oil and position the measuring cup back on the lid. Click "Next" until you get to the indication of turning the selector to heat the water.
At the tone, follow the instructions; remove the lid, press Tare to reset the scale and add 250 g of quinoa directly into the mixing bowl (instead of the 500 g of rice requested) then follow the steps until the cooking begins.
We have no idea of the cooking time, the temperature and the speed but we must trust the Thermomix! It will turn quickly, then slow down after a few minutes to eventually come to a stop without ringing. The cooking is done by absorption so wait despite the apparent inactivity of the Thermomix!
At the end of cooking, transfer the quinoa into the Varoma dish to strain it under cold water before adding it to the salad bowl with the vinaigrette.
Add pumpkin seeds, strawberries, arugula and goat cheese in chunks. Mix gently.
