Squash and Pumpkin Seed Cookies

INGREDIENTS
  • 300 g squash of your choice
  • 250 g flour
  • 1 tsp. baking powder
  • 160 g brown sugar
  • 60 g butter diced
  • 2 eggs
  • ½ tsp. cinnamon
  • ½ tsp. ground ginger
  • 140 g of pumpkin seeds roasted

  • Parchment paper
  • 2 tablespoons
INSTRUCTIONS
  1. Preheat oven to 350°F.
  2. Peel and cut squash into pieces. Place in the mixing bowl and chop 10 sec/speed 5.
  3. Add flour, baking powder, brown sugar, butter, eggs, and spices. Mix 30 sec/speed 7.
  4. Add pumpkin seeds and mix 10 sec /reverse/ speed 3.
  5. Using two tablespoons, drop a dollop of the cookie dough on a baking sheet covered with parchment paper. Bake 15 minutes at 350°F.
NOTES

In step 3: Along with pumpkin seeds, you could add dried cranberries or raisins or chocolate chips.
