Squash and Pumpkin Seed Cookies
- 300 g squash of your choice
- 250 g flour
- 1 tsp. baking powder
- 160 g brown sugar
- 60 g butter diced
- 2 eggs
- ½ tsp. cinnamon
- ½ tsp. ground ginger
- 140 g of pumpkin seeds roasted
- Baking sheet
- Parchment paper
- 2 tablespoons
Preheat oven to 350°F.
Peel and cut squash into pieces. Place in the mixing bowl and chop 10 sec/speed 5.
Add flour, baking powder, brown sugar, butter, eggs, and spices. Mix 30 sec/speed 7.
Add pumpkin seeds and mix 10 sec /reverse/ speed 3.
Using two tablespoons, drop a dollop of the cookie dough on a baking sheet covered with parchment paper. Bake 15 minutes at 350°F.
In step 3: Along with pumpkin seeds, you could add dried cranberries or raisins or chocolate chips.
